Method
- 1Preheat oven to 350°F.
- 2In a mixing bowl, combine egg whites, canned pumpkin, nonfat Greek yogurt, melted coconut oil, and vanilla extract. Mix well.
- 3In another mixing bowl, whisk together sugar substitute, all-purpose flour, cocoa powder, protein powder, baking powder, and salt.
- 4Combine wet and dry ingredients. Mix thoroughly to avoid clumping.
- 5Spray a square or rectangular baking dish with cooking spray or line with parchment paper.
- 6Pour brownie batter into prepared baking dish.
- 7Bake at 350°F for 35 minutes, removing slightly underdone (they will continue cooking as they cool).
- 8While brownies bake, prepare frosting by mixing plain nonfat Greek yogurt, nonfat cream cheese, powdered sugar substitute, and cocoa powder in a bowl. Refrigerate for 10 minutes.
