Ingredients

  • 🧅Onion1 medium
  • 🫑Red bell pepper1 medium
  • 🌿Fresh parsley½ bunch
  • 🧄Garlic cloves1–2
  • 🫒Olive oil (kebabs)3 tbsp
  • 🌶️Paprika1 tbsp
  • 🧂Salt (kebabs)1 tbsp
  • 🫑Black pepper1 tsp
  • 🌾Cumin½ tsp
  • 🍚Pearl couscous500g package
  • 🧅Onion (couscous)1 medium, sliced
  • 🥕Carrot, grated1 medium
  • 🍗Chicken stock4 cups
  • 🫒Olive oil (couscous)3 tbsp
  • 🥬Iceberg lettuce1 head, chopped
  • 🌽Sweet corn, canned1 can, drained
  • 🥒Persian cucumbers3, chopped
  • 🍋Lemon juice1 lemon
  • 🫒Olive oil (salad)2 tbsp

Method

  1. 1Pulse onion, red pepper, parsley, and garlic in a food processor until finely minced.
  2. 2Transfer minced vegetables to a strainer and squeeze out all excess liquid.
  3. 3Mix the drained vegetables with ground beef, 3 tbsp olive oil, paprika, salt, black pepper, and cumin.
  4. 4Form kebabs by placing meat mixture on a gallon-size plastic bag, laying a wooden skewer in the center, folding the bag over, and pressing the meat evenly across the skewer with a knife.
  5. 5Combine pearl couscous, sliced onion, grated carrot, 3 tbsp olive oil, black pepper, and chicken stock in a 9×13-inch baking dish; mix well.
  6. 6Lay formed kebabs across the top of the couscous, ensuring they do not touch the liquid.
  7. 7Cover the baking dish with parchment paper, then foil.
  8. 8Bake at 375°F (190°C) for 25–30 minutes. Remove cover and bake for another 15 minutes. Broil for 5 minutes if desired.
  9. 9While the couscous bakes, toss together lettuce, drained corn, cucumbers, lemon juice, 2 tbsp olive oil, salt, and black pepper.
  10. 10Serve kebabs and couscous with the fresh salad on the side.
