- 🍚Pearl couscous500g package
- 🧅Onion (couscous)1 medium, sliced
- 🥕Carrot, grated1 medium
- 🍗Chicken stock4 cups
- 🫒Olive oil (couscous)3 tbsp
- 🥬Iceberg lettuce1 head, chopped
- 🌽Sweet corn, canned1 can, drained
- 🥒Persian cucumbers3, chopped
- 🍋Lemon juice1 lemon
- 🫒Olive oil (salad)2 tbsp
Method
- 1Pulse onion, red pepper, parsley, and garlic in a food processor until finely minced.
- 2Transfer minced vegetables to a strainer and squeeze out all excess liquid.
- 3Mix the drained vegetables with ground beef, 3 tbsp olive oil, paprika, salt, black pepper, and cumin.
- 4Form kebabs by placing meat mixture on a gallon-size plastic bag, laying a wooden skewer in the center, folding the bag over, and pressing the meat evenly across the skewer with a knife.
- 5Combine pearl couscous, sliced onion, grated carrot, 3 tbsp olive oil, black pepper, and chicken stock in a 9×13-inch baking dish; mix well.
- 6Lay formed kebabs across the top of the couscous, ensuring they do not touch the liquid.
- 7Cover the baking dish with parchment paper, then foil.
- 8Bake at 375°F (190°C) for 25–30 minutes. Remove cover and bake for another 15 minutes. Broil for 5 minutes if desired.
- 9While the couscous bakes, toss together lettuce, drained corn, cucumbers, lemon juice, 2 tbsp olive oil, salt, and black pepper.
- 10Serve kebabs and couscous with the fresh salad on the side.
